Exactly! It was a tasty dish of salt cod with olives and capers!

Here is what you need to repeat the experience anytime you want: 
1 lb desalted salt cod fillet
1 1/3 cups brown onions
1 cup plain flour
20 oz tomato passata (pureed tomatoes)
3 tablespoons extra-virgin olive oil
1 oz salted capers (to be desalted)
1/3 cup Taggiasca olives
1-2 fl oz white wine
1 tablespoon of oregano
parsley to taste
salt and pepper to taste

The best fresh tomatoes are only available for a short time in season. That’s why in the second half of the 19th century in Italy, some farmers started thinking of ways to process them, in order to preserve all their unique nutritious qualities and their insuperable taste for the rest of the year. The industrial method then developed proved successful enough to be acknowledged at the 1867 Paris Exposition as one of the most ingenious inventions of the century.

Anyway, here’s what you need to prepare a smooth Lobster Bisque: 
about 3 lbs whole lobster 
about 2 tablespoons unsalted butter
1 ¼ cup tomato passata (pureed tomatoes)
1/3 cup sour cream
½ cup cognac or brandy
1 shallot, finely chopped
about 4 tablespoons extra-virgin olive oil
about 2 tablespoons unsalted butter
2 bay leaves
a sprig of thyme (if fresh), or a pinch dried
2 tablespoons all-purpose flour
salt and pepper to taste
